Mom's Basic 5-Ingredient Lentil Soup (Fakess Soupa)

This is as authentic as you can get. Mom's greek lentil "Fah-kes" soup passed down from her grandmother. As I kid, I loved requesting this dish, it was like sneaking in a bad word without getting in trouble. Kids on the street use to line up with their bowls when she made a fresh batch. It is my soul food, my childhood. I have made a bunch of variations of this soup but nothing is better than this simple, five ingredient soup that packs a lot of flavour, iron and fibre and tastes better the next day.

Why is this simple soup good for you and your heart? One big reason.
Lentils vs. noodles. I need substance in my soups like potatoes, noodles or rice, but unlike noodles and friends, lentils pack a ton of fibre which is great for your heart. It is also very filling and gives you energy while stabilizing blood sugars. Having a legume, fibre-rich diet will help lower your cholesterol. My family is proof of that.
Ingredients:
1 1/2 cup green lentils (rinsed)
4 cup vegetable (or chicken) broth 1 cup water
2 dried bay leaves 2 tbsp tomato paste
5 smashed garlic cloves
salt and pepper to taste
Garnish with olive oil and red wine vinegar.
4 Easy Steps (Instructions):

Step 1: Thoroughly rinse the lentils.
Step 2: Throw all of the ingredients into a pot and bring to a boil. Cover and reduce to a simmer.
Step 3: The longer you cook it the better. Cook for at least 1 hour, you may need to add more water to the pot.

Step 4: To enjoy, discard bay leaves and serve with a drizzle of olive oil and red wine vinegar. Yum.
